Soes (Dutch) is a soft-textured cake and the inner hollow contains fla (vla), custard, or meat.
Soes cakes in French are called choux. The shape that was round like a cabbage makes this cake called choux (French for cabbage).
Earlier, the Soes cake is always filled with vla or custard which is served in a cold, but now the Soes cake is treated as a bread that can be filled with anything. The shape is also diverse, if made elongated called Eclair, some are even rolled up, made like a snakes, and others.
Arya-style Soes Ragout is an old fashioned version of Soes combined with savory Ragout.
